I have heard stories similar to yours many times.
The Corregidor Inn Manager recently told me two months ago that, by far, they get most of their reservations via the web now. That must mean that they are much better at this aspect of reservations than they used to be. On the Island, the Corregidor Inn does have an internet connection at the front desk. I have seen them checking e-mail queries but that is not the best option for you even if they do reply. Any information they receive has to be forwarded to Manila and they cannot take pre-payments.
You can try the internet reservation method first but it is probably best to speak to someone directly so I will list some numbers for you here. Suggestion, call any day just after 8am PI time. The day tour crowd has just departed for Corregidor and most of the office staff is still there. They should answer the phone throughout the day but even I have trouble getting anyone. I try often and use all numbers.

Sorry I cannot be of much help with Bataan regarding accomodations. Karl who is on this website knows much more than me about Bataan, perhaps he can help. I have been there three times but they were day trips only.
As for things to see in Bataan and area, a few locations are Mariveles where the Death March started. There is a marker and monument. Mount Samat National Shrine was a battle site and is worth a visit. There are various monuments along the route towards San Fernando such as battle and surrender sites. San Fernando (in the province of Pampanga) has a railroad station that is still there. It is where the POWs were loaded onto railcars for the trip up to Capas. Nearby the former Clark Airbase has various monuments. Outside one of the gates is Mabacalat which is where the Kamikaze suicide pilots originated. On the base at a remote corner is a tunnel where a sign says they hid from air raids. Others can probably list more places.
Mid February is a good time to meet up with some board members if you are interested. Good luck with your reservations.
